Sweet corn Soup
My most favourite soup. I was very eager to learn to make this soup. My sis in law Richa makes an awesome chicken soup. So I got few tips from her on making a chicken clear soup. She also gave few tips on different variations. I tried the basic chicken soup first which my kids loved. Finally after various successful attempts at different variations I finalized on this recipe which uses vegetable stock, as my ultimate aim to include various food categories in whatever form without the family realising.
In this recipe I have made the vegetable stock along with the chicken stock by boiling both together.
I added whatever veggies I could find which would not alter the taste. There is no need to add the veggies to the soup. Though I have added few pieces of carrot to make the soup colourful.
Also I had taken the bone pieces from 1kg of chicken so that I can pull the flesh after cooking the bones to add to the soup.
The sweet corn is grinded to a fine paste, alternatively it can coarsely grounded or few corn kernels can be added whole while boiling the soup.
Ingredients:
250 gm chicken bones
100 gm sweetcorn
5 garlic petals
100 gms mixed veggies (carrot, beans, capsicum, cabbage)
1 egg
1tbsp butter
1tsp cornflour/wheat flour
Salt to taste
1tbsp spring onion for garnish
Method:
Pressure cook chicken, veggies along with little salt. Give 2 to 3 whistles
Separate the broth from the bones and veggies. Cool the bones and separate the chicken pieces and keep aside.
Grind the sweet corn, garlic and cornflour. Adding the cornflour while grinding eliminates the chances of lumps.
Add butter in a pan and saute the grinded paste for a minute. Add the broth and cover and boil for 5 minutes on low flame till the raw taste goes away.
Add the pulled chicken pieces to the liquid and add salt as per your taste .
Once the soup is almost ready, break the egg in a small bowl and whisk it.
Pour the egg into the boiling soup( remember to keep the flame low) continuously stirring as your pour it. Switch off the gas.
Sprinkle the spring onion and your hot and delicious sweet corn soup is ready.
