Almond flour choco chip cookies
I always try to find ways to make basic recipes using healthy ingredients as my kiddos love to eat junk.
Apart from my early baking days when I was still experimenting I have never used maida in my bakes.
So when I came across a recipe using almond flour I was thrilled as my son doesnt eat almonds and i could sneak in the super food in his diet.
In this recipe I have ground almonds in my mixie to make the flour. You can also buy ready almond flour at any super market or online store.
I have used a mix of cane sugar and brown sugar as the taste gets altered if only cane sugar is used. But if you are used to the taste you can use only cane sugar or any othertyoe of sweetner like brown sugaror powdered jaggery too.
Ingredients:
2 cups almond flour
1 tbsp cornflour
3/4 cup cane sugar/organic brown sugar (equal quantity)
1/2 cup butter (melted)
1 egg
1/2 cup choco chips
1/2 tsp baking soda
1 tsp vanilla essence
Method:
Whisk together almond flour, cornflour and baking soda in a bowl. Keep aside.
Whisk the melted butter and add sugar and vanilla. Mix till well blended.
Now add the egg and beat untill everything is combined nicely.
Add the dry ingredients and choco chips to form a soft dough.
Do not knead.
Keep in a container with a lid and refrigerate for at least an hour. You can also refrigerate overnight and bake the cookies at your convenience.
Make small balls of the dough and place on a baking dish at least an inch apart as the cookies spread a bit as they get baked.
Bake at 180C for 15 to 18 minutes.
The baking time is different for every oven.
The cookies will be soft when warm. but they will turn crispy as they cool down.
If you want the cookies more crispy then you can bake for 1 or 2 minutes more.
Store in an air tight container for 3 to 4 days if they last that long :)
