This is my Go To recipe when I have surplus of Basil.
It serves well as a delicious snack for everyone at tea time. Not too heavy on the tummy, and healthy and easy to make.
Only thing is the preparation needs to be done well in advance and planned as the bread dough need time to rise.
So if you want eat the buns at 4pm then you need to start by 1pm at least. The procedure is quite easy once you get the hang of kneading the dough.
The stuffing can be of your choice. Even just cheese and a little sprinkling of mixed herbs taste delicious 😋
So here goes the ingredients and megrod to make the buns.
Ingredients:
For the proofing
1tsp dry yeast
1stp sugar
1/4 cup warm water.
For the dough:
3 cups flour(maida or 2:1 maida and wheat flour)
2 tbsp melted butter
1 1/4 cup of water
1cup Basil leaves
1 cup corn
1 cup grated mozzarella or processed cheese
1stp salt
Method:
Mix the ingredients for proofing in a bowl. And allow to rest for 10 mins.
You will see the yeast getting activated and froth forming on the top.
Now mix the dough ingredients along with the yeast mixture to form a slightly sticky dough.
Now on a clean surface Sprinkle some flour and knead the dough by stretching with the base of your palm and folding back the dough.(stretch and fold method). This should be done for about 10 minutes till the dough becomes smooth.
Place the dough in a large, well greased bowl and cover with cling film for 1.5 to 2 hours or till the dough has doubled in size.
Punch out the dough and knead for a few minutes.
Take a ball sized piece of the dough and roll it out, stuff some cheese and and corn and bring the sides together to close it up. Place this on a baking tray.
Similarly make small sized buns with corn and cheese and place them on the tray leaving some gaps in between.
Brush few drops of milk on the buns.
Now cover the trays with cling film and keep aside to rise for half hour. The buns will double in size.
Place the tray in a preheated oven at 200 degrees for 25 to 30mins or till the buns become brownish on top.
Brush with butter and cover with clean cloth for few minutes so that buns remain soft.
Or eat crisp hot buns by dipping in melted butter.
