So this paratha happened because I had palak paratha dough and some mashed potatoes leftover from another dish.
Rummaging inside the pantry and fridge for fresh ideas and I found a packet of paneer. I told my son I'm making green coloured cheesy (well, paneer is cottage cheese)7aloo paratha and he got super curious and excited.
And so evolved the paneer palak paratha. You can get kids excited for meals by just framing the sentences when announcing the menu by according to how they like to hear it.
Ingredients for paratha
1 bunch palak
1.5 cups flour
1/2 tsp ajwain
1tsp salt
Ingredients for the filling
2 small potatoes (boiled and mashed)
100 gm paneer(grated)
1 small onion chopped
Coriander leaves
1tsp turmeric
1/2 tsp chilly powder
Salt as required
Method
Blanche the palak in very little water. Roughly chop. Keep aside the water. Add in the flour salt and ajwain. Slowly make a dough add in the palak water as necessary. Make a firm dough, cover and keep aside.
Mix all the filling ingredients mentioned together.
Make small balls and keep aside.
Take some dough and roll into a thick chapati.
Place the paneer mashed ball in the centre of the chapati. Gather the ends of the chapati around the paneer ball, hold it all together and pinch off the extra dough.
Flatten it with your hand and spread some flour and with a light hand roll out a thick paratha.
Spread some ghee on the tava and roast the paratha well on both sides.
Serve hot with a dollop of ghee and some pickle or curd.
