Moist and chocolatey super delicious cupcakes with buttercream frosting.
Ideal recipe if you are craving for something chocolatey as I was for the past few days.
This recipe calls for buttermilk made by mixing milk and vinegar which lends the moistness to these beauties.
We were too eager to gobble them up so the frosting was just dumped onto the cupcakes with a spoon and a simple sprinkling of silver sugar balls give a festive finish.
You can also pipe the frosting on the tops to give a more fancy look. Just refrigerate the frosting for half an hour before piping if it looks a little runny.
Ingredients :
150 wheat flour
180 gms brown sugar
40 gm cocoa
1tsp baking powder
1/2 baking soda
3 eggs
100 gms butter
1/4 cup milk
1tsp vinegar or lemon juice
1/2 tsp vanilla essence
For the frosting:
100 gms dark chocolate chopped
50 gms cream
100 gms butter softened
150 gms icing sugar
Few drops of vanilla essence
Method:
Add the vinegar in warm milk and keep aside to curdle.
Melt butter and cream it with a spatula. Add the sugar and mix.
Add the eggs one by one beating well.
Sift the dry ingredients and add to the egg mixture.
Incorporate the flour mix into the wet ingredients slowly.
Add the buttermilk and fold till no lumps remain. You can also use a hand blender.
If you have paper cupcake moulds you can use them or use steel or aluminum tins by greasing them and dusting little flour.
Pour the batter into the moulds till 2/3 is filled. I have used 3 types of moulds here.
Preheat oven to 180 degrees. Place the mounds on a wire rack and bake for 18 to 20 mins.
The baking time of oven varies. So please check 2 to 3 minutes before the finish time by pricking a toothpick into the centre of the cupcake.
Remove from oven and keep aside to cool down.
Now let's prepare the frosting.
Melt the chocolate over a double boiler till fully melted. Add the cream and mix well. Keep aside.
Beat the softened butter with a whisk till creamy. Add the icing sugar and beat well.
Now add the vanilla and mix.
Add the chocolate mixture and beat with a blender till it turns creamy.
Make sure the cupcakes have cooled down completely.
Now you can either spread the frosting over the cupcakes with a spoon like how I have done. Or pour it into a piping bag and do a fancy topping.
Either way the cupcakes are delicious.
