Caramel pudding

 


Delicious and healthy caramel pudding is a regular dessert at my house. A favorite among everyone ( which is very rare), it's my go to sweet dish when kids demand a dessert.

There are variations like chocolate caramel pudding or coffee pudding which can be made for a change. Given in notes.



Ingredients:

3 eggs

200 gms condensed milk

400 ml milk

1tbsp sugar

1/2 tsp vanilla essence


For the Caramel:

3 tbsp sugar

1tsp water


Method:

In a copper bottom vessel add the sugar and water and keep over a low flame till the sugar starts to boil. Keep moving the mixture around the vessel to coat it with caramel. When the caramel turns a golden brown and the sugar is melted turn off the flame. Keep aside.

In a another vessel, break open the eggs and beat with a fork or a hand blender.

Add the sugar, milk maid, eggs and milk and beat well till well blended.

Pour the mixture over the caramel.

Add 1 cup water in a pressure cooker and place the vessel. 

Close the cooker and cook until youbget 3 whistles.

Chill the caramel pudding.

Loosen the pudding in the vessel with a blunt knife.

Unmould it upside down on a plate.

Note:

1. For chocolate pudding add 2 tablespoon of cocoa powder to the pudding ingredients. 

2. For coffee pudding add 1 tablespoon instant coffee powder
