Lemon Drizzle cake



 This is a favorite in my family. Any time I ask for suggestions to bake as a snack. Lemon cake!!! Is the only answer I get.
Every birthday my daughter wants only lemon cake. So I have added some buttercream frosting to make the cake look festive. 
The drizzle on the cake is lemon and sugar syrup. And the base cake gets a lemony flavor from the lemon rind. 
Rind is the yellow part of the lemon skin. While grating it one should be careful to not grate the lower white part of the skin. 
Another point to remember is if you are squeezing juice from a lemon whose rind has been grated then do not squeeze it too much as the bitterness from the white part of the skin gets seeped into the juice. Just give a light squeeze and discard.


 
The recipe is a variation made to the simple vanilla sponge cake. Recipe available in this blog.

Ingredients:

100 gms wheat flour
100 gms sugar
100 gms butter
1/2 tsp baking powder 
2 eggs
1/2 tsp vanilla essence 
Rind of 1 large or 2 small lemons
2 tablespoon milk

For the drizzle:
Juice of 1 large lemon
50 gms icing sugar
1/2 tsp water

Method:

Pre heat oven to 180 c.

Melt butter in a pan or in microwave.  Careful not to burn it while heating.

Add the sugar and beat until creamy. You can do this by hand or by a hand beater.

Add the vanilla essence and the eggs and beat until eggs turn frothy. 

Sift the flour and baking powder and fold in to the liquid mixture.

Add the milk one spoon at a time to check the consistency. And mix until incorporated.  Do not overmix the batter.
Grease and flour a 6 or 7 inch baking dish. 
Pour the batter in to the dish.
Bake for 28 to 30 minutes. 

As the cake is baking keep the drizzle ready by mixing the lemon juice, sugar and water till the sugar is completely dissolved.

Once the cake is baked let it cool for 10 to 15 minutes. Unmould it onto a plate and make holes 1 to 2 inches apart all over the cake with a fork.
Pour the syrup over the cake with a spoon completely covering the cake. Let it soak into the cake for about half hour.

Cut slices and bite into the lemony deliciousness.
